Use one egg per muffin cup. So, if you have 6 eggs, you can fill 6 muffins cups. Beat the eggs and add a little milk. Set aside. Grease each muffin cup. Place chopped whatever in the bottom of each cup. (Great way to use up bits of this and that. I used chopped tomato, onion, and bacon. Mushrooms and green pepper would have been good, too.) Pour egg/milk mixture into each cup. Do not fill all the way to the top. Place grated or sliced cheese on top. Bake at 425 degrees Fahrenheit for 20 minutes. These keep for several days in the refrigerator.
I made a large batch of spaghetti sauce and will make meatloaves tonight. I'm freezing some and will take some to our next-door neighbor. The wife is having surgery later this week - she is donating a kidney - and I want her to have some things in the freezer when she gets home. Plus, we're expecting company next the next two weekends and I'm trying to get a jump on things. Our boys are coming this weekend to visit a couple of days and then to attend a big soccer game in Columbus, OH. The next weekend, Mom and Daddy are coming!!!
Saturday night, we attended the annual pig roast (3rd year for it) at Meg and Dennis' house. It drizzled rain but was still a good time. They had two bands and an Elvis singer. We didn't get to hear Dennis' band play - they had to wait for the rain to pass before they played and we left before then.
Sunday, I made a double batch of Pumpkin Lager soap with Samuel Adams Harvest Pumpkin Ale, pureed pumpkin, and pumpkin pie spice. I also made a batch of Hazelnut Toffee with Samuel Adams Hazel Brown and ground hazelnuts. I prepared another four batches of lye for today's soaping event. The pictures are of the Pumpkin Lager being mixed with the stick blender and the three batches (Pumpkin Lager in the left one and in the middle and Hazelnut Toffee on the right) already poured into the Pringles cans I used as molds.
Today, I soaped four batches - from left to right - Oak, Orange, & Oats, Spiced Amber Ale, Chipotle Caramel, and Fresh Bamboo. The Oak, Orange, and Oats is a favorite! With orange essential oil and oakmoss fragrance oil and oatmeal -- YUM! The Spiced Amber Ale contains a botte of Great Lakes Brewing Co. Christmas Ale with a mix of cinnamon and cloves sprinkled in. The Chipotle Caramel contains a bottle of Magic Hat Pistil. The Fresh Bamboo includes fresh avocado, coconut milk, shea butter, and silk. As usual, I can hardly wait to get these logs cut into bars!!!!!!
As you can see, it was a beer soap weekend! These four new beer soaps will join the Oatmeal Stout already on the shelves. I have one small bar of Bay Rumble left so that will be the next to be replenished. Christmas is coming and everyone loves a bar of handmade soap in their stocking! Even the men!
I'm only four pattern rows and a bind-off row away from finishing Raleigh's baby blanket. Hopefully, I will get that done tonight.
I had a rubber ducky sighting Friday. Stuck in traffic on I-71 North out of Cincinnati, I spied a rubber ducky high up on a building overlooking the interstate. An omen for my soapy weekend to come!
I am SO up for the upcoming short four day work week!!! How about you!
