Eryn made this while we were visiting this past weekend. It smelled delicious and looked yummy, too. It is delicious in yogurt! Adds the perfect "crunch factor".

A few things I did differently - I used sugar free maple syrup, I didn't add salt (the pistachios and pumpkin seeds were already salted), and I baked it longer than 15-20 minutes. I think mine baked for at least 45 minutes or so. I kept taking it out of the oven and moving it all around.
Next batch I make, I'm going to use pecans and pumpkin seeds and chopped apricots or peaches instead of the tart cherries.
